Join us in this four-week program as we take a look at how to make simple, straightforward, and healthy meals! Hosted by Chef Andrew Schmidt, the Healthy Meals Series will provide students the know-how to create delectable dishes that will improve their overall lifestyles! This series is open to all skill-levels, targeting those who have little to no cooking experience or those who wish to improve their overall diet. Not only is this designed to better one’s health, this program also targets those who simply wish to cook easy dishes without breaking the bank at a restaurant.

Each week of class is split into two portions: students begin by listening to a lecture from the chef instructor and watching his demonstration before everyone heads into the kitchen to prepare their own meals. Students will be guided along during the kitchen portion by our staff if they have any questions or concerns. Once students reach the final touches of their meals, they are invited to sit down and enjoy their meals in the kitchen. 

This program focuses on quick, affordable recipes that incorporate fresh, whole foods, encouraging students to embrace healthy eating habits that they can carry into their daily lives. By the end of the series, students will be equipped with the skills to make thoughtful food choices and cook meals that support their overall well-being. 

Chef Instructor – Andrew Schmidt:

Chef Drew is a graduate of the Culinary Institute of America with over 10 years of hands-on kitchen experience. Drew has an extensive background in plant-based/seasonal menus, refined and rustic cooking techniques, as well as classical French and Italian culinary training. His passion for, and education of, food history/traditional cultural recipes opens the door for a deeper understanding and appreciation of recipes, covering not just how we cook great food, but rather why we cook it in a certain, special way. In his own words, “I aspire to share the stories and artisanal crafts that illustrate how food and drink is an eternal bond between us all.”

Week 2 – Sizzle & Spice: South American Style

  • Pan Seared Pork Tenderloin
  • Chimichurri Sauce
  • Grilled Portobello Mushrooms and Bell Peppers
  • Chili Lime Black Beans

Week 3 – A Taste for Thai

  • Poached Shrimp
  • Quinoa Pilaf
  • Coconut Curry Sauce
  • Stir-Fry Vegetable Medley

Week 4 – Light and Bright Italian Delights

  • Lemon Asparagus Risotto
  • Grilled Mahi Mahi
  • Sun-Dried Tomato and Olive Tapenade

Cost:

The Healthy Meals Series is $400.00 for all four weeks of classes. Students may not sign up for individual classes. No chef jacket fee is added for this program.

Cancellation Policy:

In the event of a student’s cancellation, refunds are based off of the student’s attendance rate. Please contact our staff with questions if you are considering cancelling your spot.

Notes:

  • No prerequisite classes or prior kitchen experience required. The Healthy Meals Series is geared for beginner level chefs and food enthusiasts!
  • If you are unable to attend any class for any reason, you are more than welcome to make it up in a following Healthy Meals Series session. Just check our schedule, confirm the date that you need to sit in on, and contact our staff by phone or email so that we can mark you down.
  • Certain weeks of the program may be pushed back for other events. Classic Cooking keeps all currently enrolled students updated with any schedule changes.
