Specialty Workshop – Croissants

Croissants Class – Menu:

  • Croissant dough
  • Croissant filling
  • Danish dough

About:

    • Learn to make croissants with Chef Susan Kolman in this Specialty Hands-On Pastry Class!  Discover the secrets to making flaky and tender croissants during this all day adventure. Starting with a yeast dough, you’ll learn to roll and fold in layers of butter to create layers of delicious delight. We’ll make traditional croissants, fill some with chocolate and also use the dough to fill and shape several types of Danish pastries. Halfway through the class, students will join Chef Kolman for a sit-down lunch.  At the end of the class, each student will make their own croissants to eat or take home.

Schedule:

  • 10:00am – 11:00am: Intro, roll, and prep dough.
  • 11:00am – 12:30am: Shape/proof croissants, egg wash, butter block, demo fillings.
  • 12:30am – 1:00pm: Demo Danish shapes, prep Danish shapes, check croissants.
  • 1:00pm – 1:30pm: Lunch.
  • 1:30pm – 2:15pm: Fill Danish, egg wash, bake Danish.
  • 2:15pm – 3:00pm: Review products, taste, complete 2nd fold.

More Info:

    • This Specialty Class is held Saturday, 10:00am – 3:00pm. Attendees must be 21 years or older to consume any alcohol.
    • To make a reservation, please call 480-502-0177 or email info@ccacademy.edu.  Or, you may register by clicking on the PayPal link below.
    • $150 per person.  This is a Specialty Class.  NO vouchers will be accepted.  Gratuity is not included in the class price.
      • Tips for our staff for this workshop are not expected but are greatly appreciated. All gratuities are evenly distributed amongst our staff members.
    • We have a 72-hour cancellation policy. This means that you have three days before the class starts to cancel or change your reservation.
      • If you have to cancel within this time period, you are subject to forfeiture of any payments made to this class.
    • No dietary restrictions or allergies will be accommodated for this class. If one or more items on today’s menu conflicts with your needs, please reserve spots for an alternative Cooking Class.
    • Class size is limited to 10-16 people. Reservations are based on a ‘first come-first serve’ basis.
    • Class starts at 10am sharp. Please be here at least 10 minutes early wearing comfortable clothes and closed-toed shoes. If you have long hair, be sure to tie it behind your head.
