- Whole Wheat Crostini with Tri-Colored Roasted Peppers & Herbed Goat Cheese
- Seared Chicken Breast (Za’atar-Seasoned) – No Dredge
- Zucchini Noodles with Lemon Cream Sauce
- Green Beans Almondine
- Lemon Mousse with Shortbread Cookie

Cooking for a diabetic in your home? Want to eat healthier? Learn the basics of glycemic index and glycemic load cooking in the kitchen with classroom instruction, demonstrations, and hands-on kitchen instruction. Understand low glycemic choices and proper preparation of food to help reduce blood sugar spikes after your meals. Choose this class as an individual instruction, or use it as a base for the three-part series on diabetic cooking launching later this fall.
What You’ll Learn:
- Glycemic overload: it’s not all about sugar.
- What is a carb? Good vs Bad Carbs.
- Diet means lifestyle. Change the narrative.
- USDA’s MyPlate – 50 years of influence.
- Balancing good carbs in your menu.
- Feeding the beast (spikes, insulin and insulin resistance).
- Cooking with Color – color and nutrients in your food.
Instructor – Ray Orndorff:
Ray Orndorff is a retired corporate executive with an eye for colorful meal preparations. Over 20 years ago he was diagnosed with Type 2 Diabetes. Ray retired in 2019, returned to school and studied nutrition & wellness coaching, and honed his kitchen skills here at Classic Cooking Academy. He’s passionate about helping others prepare healthy, colorful, and nutritious meals by offering a simple approach for healthy lifestyle changes.

- COST: $80 per person. Gratuity is not included in the class price.
- Tips for our staff for this evening are not expected but are greatly appreciated. All gratuities are evenly distributed amongst our staff members.
- If your party has six or more guests, you can still reserve spots for any recreational class or event if you do not wish to do a private party. However, we will charge your group an 18% service fee at the time of your reservation. With this in mind, it is preferred that you register your entire guest count all at once.
- Diabetic-Friendly Cooking Classes are held on select Thursdays, 6:30 – 9:00pm.
- We have a 72-hour cancellation policy. This means that you have three days before the class starts to cancel or change your reservation.
- If you have to cancel within this time period, you will not receive a credit to apply towards a different event. We do not issue monetary refunds.
- No dietary restrictions or allergies will be accommodated for this class. If one or more items on tonight’s menu conflicts with your needs, please reserve spots for an alternative cooking class.
- Reservations are based on a ‘first come-first serve’ basis.
- Class starts at 6:30pm sharp. Please be here at least 10 minutes early wearing comfortable clothes and closed-toed shoes. If you have long hair, be sure to tie it behind your head.
- Students will receive a full copy of all recipes for use at home.
