A Few Details:
Each weekly class starts with a Chef Instructor lecture and demonstration before all student chefs enter the professional kitchen for hands-on application in preparing the recipes or concepts central to that week’s topic.
The total cost of the 24-week Practical Series is $2,500. A deposit of $550 is required at the time of the enrollment. *Additionally, a $35 fee is collected for the purchase of a chef’s jacket, required to be worn by all student chefs. Space is limited. Early registration is encouraged.
A zero-interest payment plan is available. For example, a $550 deposit *plus the $35 Chef jacket fee is required to reserve your place in the Series, then $325 a month, for 6 consecutive months, is collected to cover the remaining balance. The Practical Series Curriculum illustrates the depth and breathe of the instruction provided through the exploration of weekly topics. Over the course of 24 weeks, students learn through clear demonstration, guided discussion and hands-on lessons in the professional kitchen. Chef Pascal teaches a comprehensive program from stocks and soups; breads; eggs; vegetables; beef, chicken and veal; fish and shellfish; grains and pasta; Asian techniques; hors d’oeuvres; pastry, desserts and chocolate. Chef Pascal has carefully designed this Curriculum to educate his student chefs in the classically trained cooking techniques which are dear to his heart and the bedrock of his culinary mastery.
Classic Cooking Academy is proud to offer the Practical Series to students who need a flexible schedule, seek an affordable program, require an interest-free payment plan, wish to embark on a cooking career, feel impassioned about food, enjoy experimenting in the kitchen, and appreciate the cultural importance of preparing and sharing a fine meal. Of note, student chefs become sufficiently familiar with fundamental technique such that following a recipe is often not required to create a delicious dish, although students receive copies of all recipes used in the Practical Series. Upon completion of the Practical Series, student chefs receive a Certificate verifying their accomplishment.
